Production technology Distilled in 2006, this rum was first aged for eleven years in 200-litre bourbon barrels in the cellars of a Peruvian distillery, where the proportion of angels is regulated through technical control of ventilation and humidity. The rum was then aged for three years in Havrezac, in the southwest of France, in 400-liter French oak barrels.
